This kind of mill CAVIER, very specific, only exists in Anjou (and nowhere else) and so well defined: regions of Saumur, from Doue la Fontaine, du Layon and few near Angers and Indre et Loire.

During the high period of operation of these mills, some 180 Cavier campaign drew Anjou.

To date, less than twenty and still only less than 10 are in a position to operate.

Since its acquisition in 1997, and its inclusion on the supplementary list of historic monuments in 1999, our goal was to restore it as it operated during the nineteenth century.

This restaurant deep in the same and without additions or technical equipment of the twenty-first century, was conducted under the supervision of the architects of buildings in France, and by professionals (stonemasons and carpenters molinologue) since 2003: walls, roof, framing, hucherolle wings, internal mechanism, ....
